200ml Light Coconut Milk

30g Special Edition Pistachio Butter

3 Tbsp Yogurt

1 Tbsp Chia Seeds

1 Tbsp Maple Syrup

½ Tsp Culinary Grade Matcha Powder

1 Pinch of Sea Salt

35g Chia Seeds

200ml Light Coconut Milk

5 Tbsp Yogurt

2 Tbsp Maple Syrup

Your favourite granola
-
1 Medium Banana, Sliced

50g Blueberries

10g Green Pistachios, Chopped

Directions
Overnight Oats
Add the rolled oats, chia seeds, pinch of salt, and matcha powder to a medium mixing bowl and stir to combine.
Add the light coconut milk, maple syrup, yogurt, and green pistachio butter. Stir until well-mixed.
Cover and place into the fridge to set overnight, or for at least 3 hours.
Chia Pudding
Pour all the ingredients into a jar and mix well. Let it settle for 2-3 minutes and then mix it well again, until there is no more clumping.
Cover the jar and store in the fridge overnight or for at least 3 hours.
Serving
When ready to eat, you can add the toppings directly into the jar, or divide them into bowls and add your toppings: chia pudding, crunchy granola, sliced banana, blueberries, and pistachios. Feel free to drizzle all this more pistachio butter over the top before serving!
Recipe Note
Substitutes
• Make it vegan: use your choice of plant-based milk and plant-based yogurt.
• Make it gluten-free: use certified gluten-free oats.
• Make it with less sugar: use mashed or pureed fruit in the base recipe instead of maple syrup.
Storage
Store in an airtight container in the fridge for up to 3 days.
