Creamy Noodles with fried mushrooms is the ultimate LAZY/EASY meal.

Try this macadamia sauce! You're gonna be putting it on everything trust me. Be sure to grab an airtight container or a jar, so you could just shake away to mix the sauce and noodles, it's much easier and quicker this way.

Creamy Macadamia Udon Noodles

Ingredients

  • 1 pack (~ 200 g) of udon noodles

  • 250-350 g - any mushrooms (Oyster, Cremini, Shiitake, or Portobello)

  • Green onions

  • 20 g - chopped macadamia

  • 4 tbsp medium roast macadamia butter

  • 2 tbsp tamari soy sauce

  • 1/2 tbsp rice vinegar

  • 1 tbsp coconut aminos

  • 1 tsp sesame oil

  • 1/2 tsp garlic powder

  • 1/4 tsp ground ginger

Directions

  1. Cook your choice of noodles according to package instructions, rice noodles, wheat noodles, udon, and even spaghetti all work well here;

  2. Chop the mushrooms and fry them separately in a pan.

  3. In an airtight container, add all sauce ingredients, give it a quick stir, add in cooked noodles, close the lid, and shake away!

  4. Add the sautéed mushrooms to the noodles, pour in the sauce, and stir until smooth. Serve with chopped green onions and chopped macadamia.

  5. Enjoy!
